When selecting the products for our morning menu, we wanted to offer you the best. Our experiences elsewhere convinced us that a good breakfast is not just a question of the quantity but rather the quality of ingredients used. With this is mind, we have devised a morning menu that should please the traditional, the health-conscious, the hearty eaters, and even those with only a light appetite by keeping in mind three words: quality, freshness and taste!

We believe that quality is synonymous with fresh ingredients. We only ever order small quantities of produce to make sure that it is not stored for too long before consumption. Consequently, we advise you to book in advance certain dishes, such as the Hearty breakfast, “Les Papilles”-style.

Please do not take offence if certain products are sold out, as such ‘limited edition’ ordering can give rise to this.
Our dishes and their origins

The Massif Central region and Basque Country

For our Hearty breakfast, “Les Papilles”-style, we have selected Iberico d’Arrosagaray ham from the Axturia mountain in the Spanish Basque country where the pigs are raised in the open air. This gives a unique taste to the meat, which melts in the mouth. For the cheese, our choice was Ossau-Iraty. It’s a goat’s cheese made traditionally in the Basque country with no added colouring or preservative.

The milk comes from goats raised in the open air in the biggest beech grove in Europe. This gives the cheese its beautiful ivory colour and exceptional taste. Try it together with some black cherry jam for an amazing and surprising experience. We also offer salami from the respected Maison Conquet in Laguiole, served on a wooden board. Reserve yours!Normandy and England

Our Morning health and energy breakfast includes dairy, cereal and fruit; a healthy, balanced combination of calcium, protein, fibre and antioxidants.

There’s a traditional-style yoghurt, muesli by Dorset Cereals that we import specially from England, and an apple, well known for its health-boosting properties. Our dairy products

All our dairy products are made by the La Ferme des Peupliers in the heart of Normandy. The Ferme des Peupliers has been producing delicious yoghurts and desserts for over forty years. The cows that produce their milk graze in high-quality pastures, guaranteeing them particular comfort and a rich diet. The dairy products are hand-made using simple, traditional recipes.

All these elements allow us to offer you products that are fresh, creamy, healthy and tasty.

After a few tasting sessions we chose bars of Conviette butter to complement our dishes. It is churned using creme fraiche from the Charentes Poitou region, and more specifically the town of Surgères, reputed for its quality milk products.

Meat from the famous restaurant, Les Papilles

The restaurant Les Papilles that we chronicled on our blog is well-known for its wine cellar, menu of fresh produce and selection of cooked meats. Its owner, Bertrand Bluy has advised and guided our choice. (Restaurant Les Papilles, 30 rue Gay-Lussac 75005).Free-range, organically-fed chickens

Our eggs are organic and ordered in small quantities to make sure they’re always fresh.A delivery from the ‘boulangerie’ every morning

Our fresh bread is organic, and the French pastries are made using only butter (no margarine, oil or hydrogenated substitutes).Carefully selected drinks

The Brûlerie des Rois Mages is a traditional coffee-roaster, giving our coffee its rich, refined taste.

The tea is selected by the Palais des Thés, known for their stringent quality. A large choice of flavours of both traditional and herb teas is on offer: fruit or flowery tea, smoked, black, green…A supplier specialised in luxury produce

Our main supplier is the Ferme d’Alexandre, a small company specialising in fresh produce for most of luxury hotels in Paris.

Discover new tastes with our jams

We have chosen traditional jams made by Andresy who continue the tradition of preparing small batches in copper cauldrons. You’ll have a choice of traditional flavours such as strawberry and apricot, but we’ll also encourage you to discover different tastes like pear and vanilla, green apple or rose petal.“Gourmandise is a passionate preference, well-determined and satisfied, for objects that flatter our taste.

Gourmandise is hostile to all excesses: any man who becomes drunk or suffers from indigestion is likely to be expunged from the lists. Gourmandise also comprehends friandise (passion for light delicacies) for pastry, comfitures, etc. This is a modification introduced for the special benefit of women, and men like the other sex.

Look at gourmandise under any aspect you please, and it deserves praise.

Physically, it is a demonstration of the healthy state of the organs of nutrition.

Morally, it is implicit resignation to the orders of God, who made us eat to live, invites us to do so by appetite, sustains us by flavour and rewards us by pleasure” – Brillat-Savarin, The Physiology of Taste – 1825, translated by Fayette Robinson
