Vincent de Paul is a line cook at the Clos Belle Juliette, the bar / restaurant of the Hotel & Spa la Belle Juliette. He explains how he came to work there, and reveals a couple of his favourite places in Paris!

There are two passions in my life that are deeply important to me: cooking and music. Every day, I put all my effort into creating dishes that delight the tastebuds and senses, because for me, cooking is much more than just simply preparing food – it’s a sort of art where each ingredient tells a story.

Similarly, music is at the very heart of my existence. It accompanies me every m inute of my dat, influencing my mood and inspiring my culinary creativity.

Whether I’m listening to cool jazz during a quiet evening or dancing to to something with a beat while preparing a party, music is the what drives my passion for cooking, and together, they create an unforgettable symphony of tastes.

I learned my skills as a restaurant cook before turning to French luxury establishments, including Fouquet’s Paris as the Head Line Chef. My culinary recital has continued onto a new page with me joining the Clos Belle Juliette in February 2023.
